Using chickpeas adds protein, fiber, and other micronutrients!

WARNING: You are going to make this over & over again so be prepared!!

Let me preface this recipe by stating: THERE IS NOTHING WRONG WITH REGULAR COOKIES AND COOKIE DOUGH.

And continue by saying that it can be really fun to find tasty ways to increase the amount of nutrients we are consuming from food! For example, this recipe is an edible cookie dough that is actually way better as dough than it is baked and it is made with chickpeas aka garbanzo beans, so we’ve added a legume to our sweet treat. What else do chickpeas offer besides being the perfect consistency for this edible cookie dough? They are packed with nutrients such as fiber, protein, iron, phosphorous, and B vitamins!

The biggest takeaway is this: Let’s focus on what we can ADD to our diets/meals/snacks/etc. rather than what we can take away! Instead of never eating normal cookies again, try occasionally making this cookie dough to satisfy your sweet tooth & also gain some nutrients in the process.

INGREDIENTS

  • 1 can chickpeas, drained & rinsed

  • 1/4 cup peanut butter

  • 1/4 - 1/2 cup maple syrup

  • 1/4 tsp baking soda

  • Pinch of salt

  • 1/4 cup dark chocolate chips

DIRECTIONS

  1. Combine all of the ingredients except chocolate chips in a blender or food processor.

  2. Blend until smooth.

  3. Pour batter into a bowl.

  4. Fold in the chocolate chips.

  5. ENJOY!

This recipe should be stored in the fridge! Recommend no more than 5 days.
